This berry and chia seed jam is absolutely delicious. It's even better than store bought jam, seriously. It’s super quick and easy to make, and it tastes incredible on pancakes.

I've been obsessed with her cooking and philosophies these past couple of weeks.
Ingredients
250g frozen berries - these can be mixed berries, blueberries, raspberries, whatever you like!
1 tbsp pure maple syrup
1 tbsp chia seeds
Method
1. Add the berries and maple syrup to a pan and cook for 5 minutes, until the berries are soft. You can mash them with a fork if you want a smoother consistency.
2. Add the chia seeds and allow the jam to keep cooking on a low heat for 20 minutes, stirring occasionally.
3. Remove the jam from the heat and place it in a bowl. It will continue to thicken for a few minutes as it cools.
You can store this jam in an air-tight container in the fridge for up to a week.
